Corn Smut!

 

Today we found Corn Smut in our corn patch!  Also known as huitlacoche to those who live in Mexico, this phenomenon is when a certain fungus infects an ear of corn, transforming the corn kernels into a mushroom-like tumor.  It is a delicacy to certain palates, and according to farm staff member Zach Davis who sampled the infected corn for lunch today, it was quite delicious!  A mix between a mushroom and sweet corn, the taste is described as “mushroom-like, sweet, savory, woody, and earthy”.  With one field of corn finished and a second ripening for harvest, we are going to try to manually ‘infect’ a few more ears to see what this is all about.  Don’t worry, don’t expect to see this ‘moldy’ corn in your share, but we will update you on how our non-scientific experiment goes—keep posted!
