Marinated Radish Salad

From the “Simply in Season” Cookbook.

Note: The recipe calls for 8 large bunches of radishes, but I can’t help think it meant to say 8 large radishes (not bunches!, that would be a lot of radishes).  I would recommend using the ingredients it calls for, and adjusting the quantity to match the number of radishes you have in your fridge (if you haven’t already devoured them).

8 large bunches radishes (sliced, diced, or julienned)

8 green onions (slices)

1/4 cup fresh dill (chopped, or 1 Tbs dill seed)


1/2 cup olive oil

1/4 cup lemon juice

1 tsp sugar

1 tsp Dijon mustard

1/2 tsp salt

pepper to taste

Stir together, pour over radish mixture, and toss lightly.  Cover and refrigerate at least 2 hours but no longer than 4.  Remove 30 minutes before serving.  Stir.

6 ounces Swiss cheese (shredded)

Sprinkle on top and serve.
